  • Optional: some lemon zest

Preparation

1. Prepare the Œuf parfait
The eggs are cooked whole at 63°C (145°F) for about 45 minutes. Ideally, use a water bath or sous-vide cooker to maintain a constant temperature. Alternatively, use a pot with a thermometer and carefully regulate the heat. After cooking, set the eggs aside.

2. Prepare the asparagus
Peel white asparagus; green asparagus only needs the bottom ends trimmed. Cook in lightly salted water with a little sugar (for white asparagus) and butter for 6–10 minutes depending on thickness, until tender yet still firm. Keep warm afterward.

3. Make the mousseline sauce
Slowly melt the butter. Whisk the egg yolks with lemon juice over a warm water bath until the mixture becomes creamy and slightly thickened. Then slowly incorporate the melted butter, similarly to making hollandaise. Season with salt and pepper. Finally, gently fold in the whipped cream to make the sauce airy.

4. Assemble
