Sunny Vegetable Tian

INGREDIENTS
1 eggplant of about 250 g or 2 zucchinis (250 g), 4 round tomatoes (300 g), 2 sprigs of fresh thyme
2 garlic cloves, 10 cl olive oil, 1 teaspoon fine salt, 1/2 teaspoon ground pepper

PREPARATION

  1. Preheat the oven to 210 °C.
  2. Wash and dry the vegetables and thyme.
  3. Slice the vegetables into approximately 1/2 cm thick slices. Place them in a baking dish, alternating eggplant, zucchini, and tomato slices in a circular pattern.
  4. Add the chopped garlic cloves. Drizzle with olive oil. Sprinkle with thyme, salt, and pepper.
  5. Bake the tian for 30 minutes, then lower the oven to 180 °C and bake for another 15 minutes.

Remove from the oven and serve.
