Tarte Tatin with Apples and Cinnamon – A Sweet French Fairy Tale

🥧 A Story That Can Smell Sweet

Like so many French classics, the Tarte Tatin is not just a recipe – it is a little legend.
The story begins in the 19th century in the heart of Sologne, in the charming town of Lamotte-Beuvron, where the sisters Caroline and Stéphanie Tatin ran a hotel.

One day – so the story goes – Stéphanie Tatin was particularly stressed. In the rush to prepare a dessert for the guests, she forgot to put the dough under the apples. She saved her mistake by simply placing the dough on top and baking everything in the oven.
After baking, she flipped the tart – and lo and behold: caramelized apples, buttery dough, an incomparable aroma.
Thus a culinary masterpiece was born from a mistake: the Tarte Tatin.

Today it is enjoyed throughout France – especially in autumn – with apples, butter, sugar, and a pinch of cinnamon. Some add vanilla, Calvados, or almonds, but the heart of it remains: the golden harmony of caramel and fruit.


🍂 Recipe: Tarte Tatin with Apples and Cinnamon

🍎 Ingredients (for 6–8 servings)

For the filling:

  • 6 large tart apples (e.g., Boskoop, Elstar, or Reinette)
  • 100 g butter (preferably lightly salted)
  • 120 g sugar
  • 1 tsp cinnamon
  • 1 packet vanilla sugar or some vanilla bean
  • 1 tbsp lemon juice

For the dough:

  • 1 roll puff pastry (French pâte feuilletée)
    – alternatively: homemade shortcrust pastry
  • Some flour for rolling out

For serving (optional):

  • Crème fraîche or vanilla ice cream
  • A touch of cinnamon for dusting

👩‍🍳 Preparation

1. Prepare apples

Peel, core, and quarter the apples. Drizzle with lemon juice to prevent browning.

2. Prepare caramel

Melt butter and sugar in an ovenproof pan (approx. 24–26 cm diameter) until a golden brown caramel forms.
Reduce heat, stir in vanilla sugar and cinnamon.

3. Caramelize apples

Arrange the apple pieces close together in the caramel (rounded side down).
Simmer over medium heat for about 10–15 minutes until they become slightly soft and combine with the caramel.

4. Place dough

Place puff pastry over the apples, gently pressing the edges into the pan.
Prick several times with a fork to allow steam to escape.

5. Bake

Bake in a preheated oven at 190 °C (top/bottom heat) for about 30–35 minutes until the dough is golden brown and crispy.

6. Invert

Let the tart rest for 5–10 minutes.
Then cover with a plate (larger than the pan), flip over firmly – careful, hot caramel! – and slide onto the serving dish.

7. Serve

Serve lukewarm with a dollop of crème fraîche or vanilla ice cream – and perhaps a touch of cinnamon for the flavor of the season.


🍏 Chef’s Tip

  • If you like, you can drizzle 1–2 tbsp of Calvados or Cognac over the apples – this enhances the flavor and adds French sophistication.
  • The tart tastes best lukewarm, when the caramel is still soft and the apples are tender.
