📋 Ingredients for 4 people

Base:

  • 200 g red lentils
  • 1 tbsp ghee or neutral oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 thumb-sized piece of ginger, grated
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp cinnamon

Vegetables & Creaminess:

  • 250 g Hokkaido pumpkin, diced
  • 150 g pre-cooked chestnuts, roughly chopped
  • 400 ml coconut milk
  • 600 ml water or vegetable broth
  • Salt, to taste
  • Freshly ground pepper

Topping (Tadka):

  • 2 tbsp ghee or coconut oil
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 small dried chili
  • 10–12 fresh curry leaves
  • Optional: roasted chestnut pieces for garnish

Side Dish:

  • Fresh coriander
  • Basmati rice or naan

🔥 Preparation

1. Prepare pumpkin and chestnuts

  • Cut pumpkin into small cubes (Hokkaido can be used with the skin).
  • Coarsely chop chestnuts.
  • Set both aside.

2. Sauté dal base

  • Heat ghee in a large pot.
  • Sauté onions until translucent, then add garlic and ginger.
  • Add turmeric, cumin, coriander, cinnamon, and garam masala and toast briefly – it should smell fragrant, but not burn!

3. Add pumpkin, lentils, and liquid

  • Add pumpkin, chestnuts, and lentils to the pot.
  • Pour in coconut milk and broth.
  • Season with salt and pepper.
  • Bring to a boil, then simmer over medium heat for about 20–25 minutes, until everything is soft and the lentils break down.

4. Optional: puree

  • If you want it very creamy, you can lightly purée the dal at the end with an immersion blender (not completely smooth – a bit of texture is nice).

5. Prepare the Tadka (Spiced Oil)

  • Heat ghee or oil in a small pan.
  • Add mustard seeds and cumin seeds – when they start to pop, add chili and curry leaves.
  • Toast briefly, then immediately pour hot over the finished dal – it sizzles and smells wonderful!

6. Serving

  • Fill bowls with the dal.
  • Top with fresh coriander, tadka, and optionally chopped, roasted chestnuts.
  • Serve with basmati rice or naan.
