The Saint-Honoré cake, also known as the Gâteau Saint-Honoré, is a true jewel of French baking art. Origin and History of the Saint-Honoré Cake

The cake was invented in the year 1847 by a pastry chef named Chiboust, who ran a famous bakery on Rue Saint-Honoré in Paris. This street, named after Saint Honoratus, inspired Chiboust to create this unique cake.

Saint Honoratus was bishop of Amiens in the 6th century and was regarded as the patron saint of bakers due to a legend involving a miracle with bread. In honor of this saint, Chiboust developed a cake that combined various textures and techniques of pâtisserie: crispy bases, filled cream puffs, and the Chiboust cream he invented, a mixture of pastry cream and whipped egg whites.

This combination quickly gained recognition and became an icon of French pâtisserie, continuing to challenge and delight pastry chefs worldwide to this day.


Recipe: Saint-Honoré Cake

Ingredients (for 8 servings)

For the shortcrust pastry base:

  • 200 g flour
  • 100 g cold butter
  • 50 g sugar
  • 1 pinch of salt
  • 1 egg yolk
  • 2–3 tbsp cold water

For the puff pastry (alternatively use ready-made):

  • 250 g flour
  • 250 g butter
  • 1 pinch salt
  • 100 ml cold water

For the choux pastry:

  • 125 ml water
  • 50 g butter
  • 75 g flour
  • 1 pinch salt
  • 2 eggs

For the Chiboust cream:

  • 500 ml milk
  • 100 g sugar
  • 4 egg yolks
  • 50 g cornstarch
  • 1 tsp vanilla extract
  • 4 egg whites
  • 100 g sugar (for the meringue)

For the caramel:

  • 150 g sugar
  • 50 ml water

Decoration:

  • Whipped cream (optionally sweetened with vanilla sugar)

Preparation

  1. Shortcrust pastry base:
    • Process flour, sugar, salt and butter into a crumbly mixture.
    • Add egg yolk and water, knead into a smooth dough.
    • Wrap dough in plastic wrap and chill for 30 minutes.
    • Roll out and place on a baking sheet. Blind bake for 10 minutes at 180 °C.
  2. Puff pastry:
    • Process flour, butter and water into a dough. Fold and roll out multiple times to create layers.
    • Roll out the dough, place onto the shortcrust pastry base and bake together.
  3. Choux pastry:
    • Heat water and butter in a pot, stir in flour and salt.
    • Remove from heat, let cool slightly and gradually stir in eggs.
    • Put the dough into a piping bag, pipe small cream puffs onto a baking sheet and bake at 200 °C for about 20 minutes.
  4. Chiboust cream:
    • Bring milk with vanilla to a boil.
    • Mix sugar, egg yolks and cornstarch, stir into the hot milk and cook until the cream thickens.
    • Whip egg whites with sugar until stiff and fold into the warm cream.
  5. Caramel:
    • Melt sugar and water over medium heat until a golden caramel forms.
  6. Assembly:
    • Spread the Chiboust cream onto the prepared base.
    • Fill the cream puffs made from choux pastry with cream and dip them in caramel.
    • Arrange the cream puffs ring-shaped on the cake.
    • Decorate with whipped cream.
