Paris – 25.06.2026: The 28-year-old chef Diego Alary, known from the 11th season of “Top Chef” in 2020, has opened his first own restaurant in the heart of Paris’s 11th arrondissement. SaltoBar is located on Rue Camille Crespin du Gast and presents a modern interpretation of Iberian cuisine.
With over 10 million followers on TikTok, Alary is one of the most successful French chefs on the platform. Together with entrepreneur Christophe Juville, he realized this new gastro-concept inspired by the vibrant cities of the Iberian Peninsula, including Barcelona, Lisbon, and San Sebastián.
The venue is housed in a post-Haussmann building whose original architecture has been carefully preserved and complemented by Iberian design elements such as Portuguese azulejos and vintage furniture. This creates a warm and stylish atmosphere that combines traditional charm with modern flair.
The menu places great emphasis on high-quality and freshly delivered products. Classics like Iberian ham from Andalusia, Sobrasada from Menorca, and various seafood dominate the selection. The dishes are deliberately designed to be shared in order to promote a communal dining culture.
Tapas specialties include Gildas in the style of the Cantabrian coast, grilled pig’s ear, Tortilla Melossa, and anchovy cones. The main courses focus on Fideuà with mussels and grilled turbot with pili-pili sauce cooked over an open fire.
The desserts also draw on Iberian tradition. Particularly noteworthy is the toasted Catalan cream, which delights as a sweet finale. The wine list was curated by sommelier Loïc Minel and focuses on terroirs from Catalonia, Spain, and Portugal. Complementing these are classic vermouths, refreshing cocktails like Tinto de Verano and Spicy Mezcalita, as well as popular beers such as Portuguese Super Bock and Spanish San Miguel.
For Alary, the opening of SaltoBar marks an important milestone in his career.
