Sunny Vegetable Tian
INGREDIENTS
1 eggplant of about 250 g or 2 zucchinis (250 g), 4 round tomatoes (300 g), 2 sprigs of fresh thyme
2 garlic cloves, 10 cl olive oil, 1 teaspoon fine salt, 1/2 teaspoon ground pepper
PREPARATION
- Preheat the oven to 210 °C.
- Wash and dry the vegetables and thyme.
- Slice the vegetables into approximately 1/2 cm thick slices. Place them in a baking dish, alternating eggplant, zucchini, and tomato slices in a circular pattern.
- Add the chopped garlic cloves. Drizzle with olive oil. Sprinkle with thyme, salt, and pepper.
- Bake the tian for 30 minutes, then lower the oven to 180 °C and bake for another 15 minutes.
Remove from the oven and serve.
