A French dessert with festive sparkle and modern freshness
✨ Introduction
The Mille-Feuille — literally “thousand leaves” — is a classic icon of French patisserie. Originally made of puff pastry, pastry cream and powdered sugar, it has been reinterpreted and developed further by famous pâtissiers like Pierre Hermé and Philippe Conticini.
In this version we lift the Mille-Feuille to a modern, elegant January level: with a velvety vanilla-champagne cream and the zesty-bitter freshness of pink grapefruit. A dessert like a winter morning — cool, clear, yet full of promises of sunshine.

🧾 Ingredients (for 6 small Mille-Feuilles)
For the puff pastry (alternative: good quality ready-made butter puff pastry):
- 1 roll butter puff pastry (approx. 270–300 g)
- 1 tbsp powdered sugar
- 1 egg yolk with 1 tbsp milk (for glazing, optional)
For the Vanilla-Champagne Cream:
- 250 ml milk
- 1 vanilla pod
- 3 egg yolks
- 60 g sugar
- 25 g cornstarch
- 75 ml Champagne or Crémant
- 150 ml cream (whipped)
- 1 sheet gelatin (optional for better stability)
For the grapefruit component:
- 2 pink grapefruits
- 1 tbsp sugar
- 1 tsp lemon juice
- Mint leaves (for decoration)
👩🍳 Preparation steps
1. Bake the puff pastry – create the base
- Preheat the oven to 200 °C (conventional oven).
- Roll out the puff pastry, place on baking paper, cut into rectangles (approx. 6×12 cm).
- Prick each piece several times with a fork.
- Optional: Brush with the egg yolk-milk mixture for more shine.
- Place another sheet of baking paper on top, then weigh down with a second baking tray (to keep the dough flat).
- Bake 15 minutes, then remove the top tray, sprinkle with powdered sugar and caramelize for a further 5–10 minutes.
- Let cool.
2. Vanilla-Champagne Cream – the star of the dessert
- Scrape out the vanilla pod, bring the seeds and pod to a boil in the milk. Remove from heat and let steep for 10 minutes.
- Beat the egg yolks and sugar until creamy, stir in the cornstarch.
- Slowly pour the hot vanilla milk in (remove the pod beforehand), stirring constantly.
- Return to the pot and thicken over medium heat, stirring constantly.
- As soon as the mixture is thick: remove from heat. Stir in the Champagne.
- If desired: soak the gelatin in cold water, squeeze out and dissolve in the warm cream.
- Let the cream cool, then fold in the whipped cream.
- Chill for 2 hours.
3. Prepare the grapefruit – freshness meets elegance
- Segment the grapefruits: remove peel and white pith, cut out the segments with a sharp knife.
- Press the juice from the remaining scraps (approx. 3–4 tbsp).
- Bring the juice with 1 tbsp sugar and the lemon juice to a boil, reduce slightly.
- Marinate the grapefruit segments in it, chill.
4. Plating – Mille-Feuille with an artistic touch
- Use three puff pastry layers per portion.
- Pipe the cream in dollops or lines onto the first layer using a piping bag.
- Place the grapefruit segments on top.
- Place the second pastry layer, add more cream and grapefruit.
- Finish with the final layer.
- Dust with powdered sugar or optionally decorate with a glaze (e.g. white icing with Champagne).
- Garnish with mint, grapefruit zest or edible flowers.
🎨 Serving suggestion:
The Mille-Feuilles can be elegantly arranged on a long plate, with a grapefruit syrup mirror beneath or small dots around. A glass of well-chilled Champagne or a dessert wine like Sauternes or Gewurztraminer pairs nicely.
