The strawberry season has begun – and with it the return of a French classic: Clafoutis aux fraises

When the first ripe strawberries appear on the markets, one of the most enjoyable phases of the year begins in France. Their scent is intense, their taste sweet and slightly tart – perfect for desserts that need few ingredients yet still impress. One of these desserts is Clafoutis, a traditional baked dish originally from the Limousin region and classically prepared with cherries. But in modern cuisine, a variant has long been established that brings the seasonal freshness of strawberries to the forefront: Clafoutis aux fraises.

A Dessert Between Cake and Pudding

Clafoutis is neither quite cake nor fully pudding. Its texture lies somewhere in between: slightly browned and delicately baked on the outside, soft and almost creamy on the inside. The batter resembles a thick crêpe or pancake batter that sets in the oven together with the fruit. While cherries offer a classic balance through their firmness and slight bitterness, strawberries bring a softer, juicier, and more aromatic sweetness to the mix.

This very characteristic makes strawberry clafoutis special: the fruit releases juice during baking, which merges with the batter and creates an almost melting texture. It is a dessert that convinces just as much when warm as when slightly cooled – ideal for long spring afternoons or as a simple finish to a meal.

The Art of Simplicity

French cuisine often thrives on reduction to the essentials. This philosophy is also evident in the clafoutis: few ingredients, carefully combined, without unnecessary complexity. The quality of the strawberries is crucial. Ripe, aromatic fruits hardly need any additional sweetness and develop their full potential in the oven.

Another important aspect is the right balance in the batter. Too much flour makes the clafoutis heavy and cake-like, too little prevents it from properly setting. The ideal consistency is soft but firm enough to cut – a delicate compromise that can be achieved quickly with a bit of practice.


Recipe: Clafoutis aux fraises

Ingredients (for 4–6 servings)

  • 400 g fresh strawberries
  • 4 eggs
  • 100 g sugar
  • 1 packet vanilla sugar or 1 tsp vanilla extract
  • 100 g flour
  • 250 ml milk
  • 1 pinch of salt
  • 30 g butter (for the dish and optionally in small pieces)
  • Optional: some powdered sugar for dusting

Preparation

  1. Preheat the oven to 180 °C (top and bottom heat). Generously grease a baking dish with butter.
  2. Wash the strawberries, remove the green tops, and halve or quarter them depending on size. Distribute evenly in the dish.
  3. In a bowl, beat the eggs with the sugar and vanilla sugar until frothy and the mixture lightens slightly.
  4. Add the flour and a pinch of salt and mix until smooth. Gradually incorporate the milk until a thin, lump-free batter forms.
  5. Carefully pour the batter over the strawberries. Optionally, distribute small pats of butter on the surface – this adds extra flavor and a slightly golden crust.
  6. Bake the clafoutis in the preheated oven for about 35–40 minutes, until the surface is lightly browned and the center has just set.
  7. Let cool slightly before serving. Dust with powdered sugar if desired.

Serving and Variations

Clafoutis aux fraises is traditionally served lukewarm. In this state, the strawberries develop their full aroma, and the texture is particularly tender. For a more refined touch, a dollop of whipped cream or a spoonful of crème fraîche can be served alongside.

The basic recipe can be easily adapted for variations:

  • A splash of orange liqueur or cherry brandy in the batter adds extra depth
  • Some sliced almonds add a pleasant crunch
  • A hint of lemon zest enhances the freshness of the strawberries
